The Garlic Goddess
Not only is salmon is so healthy, it cooks so quickly which is usually the name of the game most weeknights. I try to make it at least once every week or so. I eat and cook salmon pretty often, I love it for its Omega 3's and Fatty Acids.
Preheat the oven to 400 degrees. Take the salmon and place in a baking dish. Drizzle with Safflower Oil and white wine, spoon the stone ground mustard onto each filet, add the butter, capers, garlic and lemon slices. Bake in oven for 12-15 minutes depending on how thick the salmon is. Serve with a light citrusy white wine, sautéed spinach and you have an easy, no carb, week night dinner. How easy was that ?
